Thank goodness that it is summer!!! I’m taking a summer break from school so i can re-prioritize, relax, work a little more, and do some reading. Yay! I’m super excited to get this summer kicked off. I have a few summer goals that I’ll be working on: read at least five books (I’m hoping for more), volunteer for the local food bank, work on our home, and this blog. I’m feeling pretty good! I’m looking forward to this break. Ideally, I’d love to be traveling, but I’ll be sure to travel around my area and explore.
Yesterday, Thomas and I went to Slate Run Historical Farm. This is my fourth time going and I just love that place. I know I’ve posted about before, but I’d love to live there. I was secretly plotting as to where I’d put things or rearrange the house. But alas, it’s a historical home so that won’t be happening (which I respect). I love all the space there. It’s so wide open and so secluded from everything. It’s a functioning farm with reenactors dressed up from the late 1800s. The horses there even do field work. There’s pigs, lambs, chickens, and geese. It’s so peaceful and lovely.
Last week was crazy. We had someone from Virginia visiting, I had to co-host a bridal shower, and I had finals. It couldn’t be any worse timing.
Last Sunday, my sister and I were hosting a bridal shower for my other sister. All-in-all, it went really well! That whole weekend was crazy, but we pulled it off. We had a biscuit bar, coffee bar, fresh fruit and tons of baked goods. We also did some decorating. The property was beautiful and it was in the country. It was a good and long day. I’ve never hosted anything before. It was actually kinda fun and everything looked great.
Not only did we have the shower, but the day before was my nephews very first tee-ball game. I was so excited to see him play.
I can’t wait to see him play more games. He’s only 4 years old so he doesn’t quite get it, but he loves it and that’s all that matters. I really enjoy being with my two nephews. They are so stinkin’ cute.
The Finals. They came and drug on and on. I was taking online classes this winter. So two of the classes I had to go to campus to take the finals. I’m not sure why I had to go to campus and take them though. It wouldn’t of really mattered. It was just inconvenient. The nice thing was that two of the three exams were open notes. I am so glad they are over with. Now i can breathe. I know I could of done better, but at this point, I didn’t care. I won’t be taking three online classes again. This was a really challenging semester and left me questioning things. But one of the reasons why I’m taking the summer off, is to reprioritize. Basically, get my shit together. Does that feeling ever go away??
Fun and delicious recipe!!
I’ve been so food bored lately. I was looking for something easy and spring-like and found this gem on eatingwell.com .
Chicken & Spring Vegetable Tortellini Salad.
It was so good and fresh. It’s pretty much cheese stuffed tortellini and veggies with a ranch dressing mixture on top. The dressing was a little different. It contains ranch dressing with some herbs and red-wine vinegar, which I wasn’t really sure if I’d like it, but it definitely worked. The spring time veggies added a really nice refreshing taste.
